Method
Caramelized onions

Cook onions low and slow
In a large skillet over medium-low heat, melt 15 g (1/2 the butter) with 1 tablespoon olive oil. Add the thinly sliced yellow onion and 1 tsp granulated sugar and a pinch (1/4 tsp) of salt. Cook, stirring occasionally, for 20–30 minutes until deep golden brown and jammy. If the pan dries, add a splash of water to prevent burning. When onions are deeply caramelized, deglaze with 1 tsp vinegar, stir, then transfer onions to a bowl and set aside.
Mushrooms

Sear mushrooms
Increase heat to medium-high. In the same skillet, add remaining 2 tbs olive oil and the remaining butter (15 g). Add the sliced mushrooms in a single layer (work in batches if needed to avoid crowding). Season with 1 tsp salt and 1/2 tsp freshly ground black pepper. Cook without stirring for 3–4 minutes to develop color, then stir and continue cooking 3–5 minutes until mushrooms are browned and most liquid has evaporated.

Finish mushrooms
Add the minced garlic and half the thyme (1 tbs). Cook 30–45 seconds until fragrant. If you like a touch of heat, add the crushed red pepper flakes now. Taste and adjust seasoning. Remove from heat and set aside.
Tomatoes & assembly

Prepare tomatoes
Preheat the oven to 200°C (400°F). Lightly salt the tomato slices (use about 1/2 tsp of the remaining salt) and let them sit on paper towels for 5 minutes to draw out excess moisture; gently pat dry.

Layer the tian
In a shallow ovenproof baking dish (20 x 20 cm / 8 x 8 in or similar), spread a thin layer of the caramelized onions to cover the bottom. Arrange a layer of tomatoes overlapping slightly. Sprinkle a third of the grated Grana Padano and a scatter of chopped parsley and a few basil leaves. Add a layer of seared mushrooms. Repeat layering (onion, tomato, cheese, herbs, mushrooms) finishing with a final layer of tomatoes on top. Drizzle 1 tbs olive oil over the top, season with the remaining 1/2 tsp salt and remaining black pepper, and sprinkle the remaining Grana Padano evenly over the top. If using, drizzle the 30 ml heavy cream lightly across the top for extra richness.

Bake
Bake in the preheated oven for 18–25 minutes until tomatoes are cooked through, edges are bubbling, and cheese is golden in spots. Remove and let rest 5 minutes. Scatter remaining fresh thyme leaves and basil chiffonade on top and, if desired, drizzle 1 tsp balsamic glaze.

Toast bread
While the tian bakes, increase oven temperature to 220°C (430°F) or use a toaster oven. Brush baguette slices lightly with olive oil on both sides and arrange on a baking sheet. Sprinkle with sea salt. Toast 6–8 minutes, flipping halfway, until golden and crisp. Alternatively, grill slices on a hot pan for 1–2 minutes per side.
