Skillet Cornbread

    Preheat and prep skillet

    Preheat the oven to 425°F (220°C). Place a 10-inch cast-iron skillet in the oven while it heats so it becomes very hot.

    Mix dry ingredients

    In a large bowl whisk together the cornmeal, flour, baking powder, baking soda, salt, and sugar until evenly combined.

    Combine wet ingredients

    In a separate bowl whisk the buttermilk, egg, melted butter, and oil until smooth. Fold in the mashed sweet potato and diced jalapeño until evenly distributed.

    Make batter

    Pour the wet mixture into the dry ingredients and stir just until combined; do not overmix. Fold in the grated cheddar, reserving a tablespoon for topping if desired. Batter should be thick but spoonable; if too stiff, add up to 2 tablespoons extra buttermilk.

    Heat fat in skillet

    Carefully remove the hot skillet from the oven using oven mitts. Add 1 tablespoon olive oil or 1 tablespoon butter and swirl to coat the bottom and sides; it should sizzle.

    Bake cornbread

    Spoon the batter into the hot skillet and smooth the top. Sprinkle the reserved cheddar over the top. Bake in the preheated oven for 15–20 minutes, or until the edges are golden, the top is lightly browned, and a toothpick inserted in the center comes out clean or with moist crumbs.

    Finish and rest

    Remove the skillet from the oven and let the cornbread rest for 5 minutes to set. Run a knife around the edge and optionally invert onto a cutting board or serve straight from the skillet.

Whipped Butter

    While the cornbread bakes, place the softened unsalted butter, honey, and salt in a small bowl. Whip with a fork or small whisk until light, smooth, and slightly aerated, about 1–2 minutes. Transfer to a ramekin and refrigerate briefly if you prefer it firmer.

    In a small bowl whisk together the Crystal hot sauce, honey, and lime juice until fully combined and slightly glossy. Taste and adjust: add more honey for sweetness or more hot sauce for heat. Keep at room temperature until serving.

To Serve

    Slice or serve wedges of the warm sweet potato and jalapeño cornbread directly from the skillet. Top each wedge with a generous dollop of the whipped honey butter and drizzle the Crystal hot sauce honey over the top to taste. Serve immediately while warm.
