Gumbo Base & Roux

    Make the roux

    In a large heavy-bottomed pot or Dutch oven set over medium-low heat, combine the vegetable oil and butter. Once butter melts, gradually whisk in the flour. Stir constantly with a wooden spoon or heatproof spatula to prevent burning. Maintain a low simmer and continue stirring for 20–30 minutes until the roux turns a deep peanut-butter to milk-chocolate brown and has a nutty aroma. If it begins to smoke or burn, reduce heat. This is the flavor backbone—patience is critical.

    Once roux reaches desired color, carefully whisk in 1 cup of the chicken stock to thin the roux, scraping the browned bits from the bottom. When smooth, whisk in remaining stock gradually so you have a combined, lump-free base. Add bay leaves. Bring to a gentle simmer and reduce heat to low while you prepare other components.

Holy Trinity & Vegetables

    In a separate skillet over medium heat, add 1 tablespoon oil (or use a bit of reserved roux oil) and sauté the diced onion, green pepper, and celery (the 'holy trinity') until softened and translucent, about 6–8 minutes.

    Add the minced garlic and cook 30–60 seconds until fragrant. Add the sliced okra and diced tomato (if using) and cook another 4–5 minutes until okra begins to soften. If using frozen okra, add it straight from frozen and cook until heated through.

    Transfer the sautéed vegetables into the pot with the roux-and-stock mixture, stirring to incorporate.

Protein & Add-ins

    Season the chicken pieces lightly with 1/2 tsp kosher salt and a pinch of black pepper. In the same skillet used for vegetables, brown the andouille slices quickly over medium-high heat 2–3 minutes per side until they color and release some fat. Remove and set aside.

    Add the chicken pieces to the skillet and brown on all sides for 3–4 minutes until sealed (they do not need to be fully cooked). Transfer chicken to the gumbo pot. Add browned andouille and any accumulated juices to the pot as well.

    Simmer gumbo on low, uncovered or partially covered, for 25–30 minutes to allow flavors to meld and chicken to cook through. Skim any foam or excess fat from the surface as needed.

    During the last 6–8 minutes of simmering, add the shrimp and mushrooms/oysters (if using). Cook until shrimp are pink and opaque, about 4–6 minutes. Taste and adjust seasoning.

Seasonings & Finish

    Stir in Worcestershire sauce, hot sauce, smoked paprika, dried thyme, cayenne, remaining kosher salt and black pepper. Start with the listed amounts and adjust to taste—gumbo should have a balanced heat and smoky-salty depth.

    If you prefer a slightly thicker texture and a touch of traditional flavor, sprinkle in the file powder (about 1 tsp) in the final minute of cooking and stir. Remove bay leaves.

    Turn off heat and stir in chopped parsley and most of the sliced green onions, reserving a little for garnish. Let gumbo rest 5 minutes before serving so flavors settle.

    To serve: ladle hot gumbo over 1/2 cup cooked white rice per serving. Garnish with remaining green onions and an extra dash of hot sauce if desired.
