Preparing the Spring Rolls

Prepare the Fillings
In a large mixing bowl, combine the julienned carrot, cucumber, red bell pepper, shredded red cabbage, mint leaves, cilantro leaves, and sliced avocado. Toss gently to mix.

Soak the Rice Paper
Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until it becomes soft and pliable. Carefully remove and place it on a clean, flat surface.

Assemble the Spring Rolls
Place a small amount of the vegetable mixture (about 2 tablespoons) near the bottom of the rice paper wrapper. Fold the sides over the filling and then roll it up tightly from the bottom to the top. Repeat the process with the remaining wrappers and filling.

Combine the Ingredients
In a small bowl, mix together the chopped fresh red chillies, minced garlic, soy sauce, lime juice, brown sugar, and water. Stir until the sugar is dissolved and the mixture is well combined.
