    Cook the Noodles

    Bring a large pot of salted water to a boil. Add the Lo Mein noodles and cook according to package instructions until al dente, about 4-5 minutes. Drain and set aside.

    Prepare the Vegetables

    While the noodles are cooking, wash and chop the broccoli, julienne the carrot, slice the bell pepper, and trim the snow peas. Chop the green onions, separating the white parts from the green tops.

Stir-frying

    Heat the Oil

    In a large skillet or wok, heat the vegetable oil over medium-high heat until shimmering.

    Cook the Vegetables

    Add the white parts of the green onions, garlic, and ginger to the skillet, stirring for about 30 seconds until fragrant. Then, add the broccoli, carrot, bell pepper, and snow peas. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.

    Add the Noodles

    Add the cooked Lo Mein noodles to the skillet with the vegetables. Pour in the soy sauce, sesame oil, and sugar. Toss everything together to evenly coat the noodles and vegetables in the sauce, cooking for an additional 2-3 minutes.

    Season and Serve

    Season with salt and pepper to taste. Remove from heat and sprinkle the green tops of the green onions over the top. Serve hot.
