Cooking the Beef Patties

    Prepare the Beef

    In a mixing bowl, gently combine the Angus beef, kosher salt, and black pepper. Be careful not to overwork the meat. Divide the mixture into two equal portions and shape each portion into a patty, about 1/2 inch thick.

    Griddle the Patties

    Preheat a griddle or skillet over medium-high heat. Once hot, place the beef patties on the griddle and cook for about 3-4 minutes. Flip the patties, and immediately place a slice of American cheese on top of each patty. Cook for an additional 3-4 minutes until the cheese is melted and the patties reach desired doneness.

Assembling the Burger

    Toast the Brioche Buns

    In a separate skillet, melt the unsalted butter over medium heat. Cut the brioche buns in half and place them cut-side down in the skillet. Toast until golden brown and crispy, about 2-3 minutes.

    Prepare the Toppings

    While the buns are toasting, slice the vine-ripened tomato and the red onion into thin rings. Set aside.

    Build the Burger

    On the bottom half of each toasted brioche bun, place a generous amount of shredded lettuce. Next, add one cheese-covered beef patty, followed by the sliced tomato, red onion rings, and dill pickle chips. Top with the second beef patty and cover with the top half of the bun.

    Serve
