Preparing the Chicken

Cut and Season Chicken
Cut the boneless, skinless chicken breasts into bite-sized pieces. Season with salt and black pepper.

Prepare Battering Station
In a bowl, combine all-purpose flour and cornstarch. In a separate bowl, beat the eggs. Dip each piece of chicken into the egg, then coat it with the flour and cornstarch mixture.

Combine Sauce Ingredients
In a saucepan, combine pineapple juice, brown sugar, rice vinegar, soy sauce, and ketchup. Stir well to combine.

Bring the mixture to a boil over medium heat. Once boiling, reduce the heat and let it simmer for about 5 minutes.

Thicken the Sauce
In a small bowl, mix cornstarch with water to create a slurry. Slowly add the slurry to the sauce while stirring. Continue to cook for another 2-3 minutes until the sauce thickens.

Add Vegetables and Pineapple
Stir in the diced bell peppers and pineapple chunks. Cook for an additional 2-3 minutes until the peppers are tender.

Add the fried chicken pieces to the sauce and stir to coat evenly.
