Prep the Ingredients
Start by gathering all your ingredients. Make sure the shrimp are peeled and deveined. Cook the rice ahead of time if you haven’t done so already.

Chop the Vegetables
Dice the carrot and bell pepper into small, uniform pieces. Slice the green onions thinly, separating the white parts from the green tops.

Cook the Shrimp
In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the shrimp and cook for about 2-3 minutes on each side, or until they turn pink and are cooked through. Remove the shrimp from the skillet and set aside.

Stir-Fry the Vegetables
In the same skillet, add another tablespoon of sesame oil. Add the minced garlic and sauté for about 30 seconds until fragrant. Then, add the diced carrot and bell pepper. Stir-fry for 2-3 minutes until they soften. Add the green peas and the white parts of the green onions, and cook for another 2 minutes.

Add the Rice
Add the cooked rice to the skillet. Break up any clumps with a spatula, and mix everything well. Stir-fry the rice with the vegetables for about 2-3 minutes until heated through.

Season and Serve
Pour the soy sauce over the rice, and season with salt and black pepper to taste. Toss everything together until well combined. Cook for an additional minute, then garnish with the green tops of the green onions before serving.
