Preparation of Chicken

    Prep the Chicken

    Cut the chicken thighs into bite-sized pieces. Season with salt and black pepper.

    Dredge the Chicken

    In a bowl, mix the all-purpose flour and cornstarch. In another bowl, beat the eggs. Dip each piece of chicken into the egg wash, then coat with the flour mixture.

    Fry the Chicken

    In a large skillet or wok, heat the vegetable oil over medium-high heat. Fry the chicken in batches until golden brown and crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Preparation of Sauce

    Make the Sauce

    In a saucepan over medium heat, combine the mandarin orange segments, soy sauce, brown sugar, rice vinegar, minced garlic, and minced ginger. Bring to a simmer.

    Thicken the Sauce

    In a small bowl, combine the cornstarch and water to create a slurry. Slowly add the slurry to the sauce, stirring continuously until the sauce thickens, about 2-3 minutes. Remove from heat.

    Cook the Rice

    In a medium saucepan, bring the water and salt to a boil. Add the white rice, reduce heat to low, cover, and simmer for 18-20 minutes or until the rice is tender and the water is absorbed. Fluff with a fork.

Assembly

    Combine and Serve

    In a large bowl, toss the crispy chicken with the mandarin orange sauce until well coated. Serve over a bed of steamed white rice.
