Lobster Ravioli

    Make the Pasta Dough

    In a mixing bowl, combine the flour and salt. Make a well in the center and add the egg and water. Mix until a dough forms, then knead on a floured surface for about 5-7 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a separate bowl, mix the chopped lobster meat and ricotta cheese until well combined.

    Roll Out the Dough

    After resting, divide the dough into quarters. Roll each piece out on a floured surface until thin (about 1/8 inch thick).

    Form the Ravioli

    Place a teaspoon of the lobster filling on one half of the rolled dough, spacing them about 2 inches apart. Fold the other half over the filling and press down to seal. Use a fork to crimp the edges.

    Cook the Ravioli

    Bring a large pot of salted water to a boil. Carefully add the ravioli and cook for 3-5 minutes or until they float to the surface. Remove with a slotted spoon.

Tomato Alla Vodka Sauce

    Sauté the Aromatics

    In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until translucent, about 5 minutes. Add the minced garlic and cook for an additional minute.

    Add Tomatoes and Vodka

    Stir in the crushed tomatoes, vodka, red pepper flakes, salt, and black pepper. Bring to a simmer and cook for about 10 minutes.

    Finish the Sauce

    Reduce the heat and add the heavy cream, stirring to combine. Let the sauce simmer for another 5 minutes until thickened. Stir in the chopped basil just before serving.

Garlic Toast

    Prepare the Garlic Butter

    In a small bowl, mix the softened butter, garlic powder, and chopped parsley until well combined.

    Toast the Bread

    Spread the garlic butter mixture on each slice of French bread. Place on a baking sheet and broil in the oven for 2-3 minutes until golden and crispy.
