    In a large skillet over medium heat, add the ground beef, chopped onion, and minced garlic. Cook until the beef is browned and the onion is soft, about 5-7 minutes.

    Stir in the chili powder, cumin, salt, and black pepper and cook for an additional 2 minutes until the spices are fragrant.

    Assemble the Enchiladas

    Remove the skillet from heat. Take a tortilla, spoon some of the beef mixture down the center, and sprinkle with cheese. Roll the tortilla tightly and place seam-side down in a greased baking dish. Repeat for all tortillas.

    Make the Sauce

    In a medium saucepan, combine the tomato sauce, diced tomatoes, chipotle peppers, chopped cilantro, lime juice, and salt. Bring to a simmer over medium heat, stirring occasionally for about 10 minutes.

    Once the sauce is ready, pour it evenly over the assembled enchiladas in the baking dish.

    Preheat the oven to 350°F (175°C). Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
