Method

Cooking the Pork Chops

  1. 1

    Prepare the Pork Chops

Rub the pork chops with olive oil, garlic powder, salt, black pepper, and chopped fresh rosemary. Allow them to marinate for at least 30 minutes.

  2. 2

    Grill the Pork Chops

Preheat the grill to medium-high heat. Grill the pork chops for about 6-7 minutes on each side or until they reach an internal temperature of 145°F (63°C). Let them rest for 5 minutes before serving.

Making the Mashed Potatoes

  1. 3

    Cook the Potatoes

Peel and chop the russet potatoes into quarters. Boil in a large pot of salted water for about 15-20 minutes or until fork-tender.

  2. 4

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, milk, salt, and black pepper. Mash until smooth and creamy.

Preparing the Brown Gravy

  1. 5

    Make a Roux

In a saucepan, melt butter over medium heat. Whisk in the flour and cook for about 2 minutes until golden.

  2. 6

    Add Beef Broth

Gradually whisk in the beef broth, stirring continuously to avoid lumps. Bring to a simmer and cook until thickened, about 5 minutes. Season with salt and black pepper.

Sautéing the Vegetables

  1. 7

    Prepare the Vegetables

Chop the mixed vegetables and mince the garlic.

  2. 8

    Sauté the Vegetables

In a skillet, heat olive oil over medium heat. Add garlic and sauté for 1 minute. Add the mixed vegetables, season with salt and black pepper, and sauté until tender, about 5-7 minutes.
