    Place the cut potatoes in a large bowl of cold water and soak for at least 30 minutes. This helps remove excess starch and results in crispier fries.

    In a large pot or deep fryer, heat the vegetable oil to 350°F (175°C). Use a thermometer for accuracy. If you don't have a thermometer, a small piece of potato dropped into the oil should sizzle.

    Dry the Potatoes

    After soaking, drain the potatoes and pat them dry with paper towels to remove excess moisture. This is crucial to avoid oil splattering.

    Fry the Potatoes (First Fry)

    Carefully add a batch of the dried potatoes to the hot oil. Fry for about 4-5 minutes until they are soft but not browned. Remove them from the oil and drain on paper towels.

    Allow the fries to cool for about 15 minutes. This step helps to achieve a crispy exterior during the second fry.
