Method

Prepare the Chips

  1. 1

    Chop the Potatoes

Peel and cut the potatoes into thick fries, about 1/2 inch wide.

  2. 2

    Soak the Potatoes

Place the cut potatoes in a bowl of cold water for at least 30 minutes to remove excess starch.

  3. 3

    Drain and Dry

After soaking, drain the potatoes and pat them dry with a clean kitchen towel.

  4. 4

    Heat the Oil

In a large pot or deep fryer, heat 4 cups of vegetable oil to 325°F (160°C).

  5. 5

    Fry the Chips

Fry the potatoes in batches for about 5-7 minutes until they are soft but not browned. Remove and drain on paper towels.

Prepare the Fish

  1. 6

    Make the Batter

In a bowl, combine 1 cup of all-purpose flour, 1 cup of cornstarch, 1 tsp of baking powder, and 1 tsp of salt. Gradually whisk in 1 cup of cold sparkling water until smooth.

  2. 7

    Heat the Oil

In a separate large pot or deep fryer, heat 4 cups of vegetable oil to 350°F (175°C).

  3. 8

    Coat the Fish

Dip each fish fillet into the batter, allowing excess to drip off.

  4. 9

    Fry the Fish

Carefully place the battered fish fillets in the hot oil and fry for about 4-5 minutes on each side or until golden brown. Remove and drain on paper towels.

Final Steps

  1. 10

    Reheat the Chips

Increase the oil temperature to 375°F (190°C) and fry the pre-cooked chips for an additional 2-3 minutes until golden and crispy.

  2. 11

    Serve

Serve the hot fish and chips immediately, seasoned with salt to taste.
