Cook the beef and vegetables
In a large skillet over medium heat, add the ground beef. Cook until browned, breaking it up with a spatula, about 5-7 minutes.

Season the mixture
Stir in cumin, chili powder, salt, and black pepper. Cook for another 2 minutes until spices are fragrant.

Mix in cheese
Remove the skillet from heat and mix in 1 cup of shredded cheese until melted and combined.

Fill tortillas
Place about 2-3 tablespoons of the beef filling in the center of each tortilla, roll them up tightly, and place seam-side down in a baking dish.

Add sauce and cheese
Pour the enchilada sauce evenly over the rolled enchiladas. Sprinkle the remaining shredded cheese on top.

Bake
Preheat the oven to 375°F (190°C). Bake the enchiladas for about 20-25 minutes, or until the cheese is bubbly and golden.

Serve
Remove from the oven, let cool for a few minutes, and serve with sour cream on the side if desired.
