Spicy Garlic Mayo Preparation

    Make the Spicy Garlic Mayo

    In a small bowl, combine the mayonnaise, minced garlic, hot sauce, lemon juice, and salt. Mix well until smooth. Set aside in the refrigerator to let the flavors meld.

Caramelizing Onions and Cooking Sausage

    Caramelize the Onions

    Slice the medium onion thinly. In a skillet over medium heat, melt the butter. Add the sliced onions and a pinch of salt. Cook, stirring occasionally, for about 15-20 minutes until the onions are golden brown and caramelized.

    Cook the Andouille Sausage

    While the onions are caramelizing, slice the andouille sausage into rounds. In a separate skillet, cook the sausage over medium heat until browned and heated through, about 5-7 minutes. Remove from heat and set aside.

Cooking the Burger Patties

    Grill the Burger Patties

    Preheat a griddle or skillet over high heat. Season both sides of the Angus beef patties with salt and black pepper. Place the patties on the hot surface and cook for about 3-4 minutes on each side for medium-rare, or until your desired doneness is reached.

    Melt the Cheese

    During the last minute of cooking, place a slice of Pepper Jack cheese on each patty. Cover the skillet or griddle to help the cheese melt.

Assembling the Burger

    Toast the Brioche Buns

    While the patties are cooking, toast the brioche buns on a separate skillet or griddle until golden brown.

    Build the Burger

    Spread a generous amount of spicy garlic mayo on the bottom half of each toasted brioche bun. Place a cheeseburger patty on each bun, followed by a portion of the caramelized onions and cooked andouille sausage. Top with the other half of the bun.
