    In a large pot, pour 1 gallon of milk and place it over medium heat. Stir occasionally and heat until the milk reaches about 190°F (88°C), just below boiling.

    Once the milk is heated, remove it from the heat and add 1 cup of white vinegar or lemon juice. Stir gently for about 30 seconds until the milk begins to curdle.

    Cover the pot and let it sit for about 10 minutes. The curds will separate from the whey during this time.

    Strain the Curds

    After 10 minutes, line a colander with cheesecloth and carefully pour the curdled milk mixture into the colander to strain the whey. Rinse the curds under cool water to remove any residual acidity.

    Transfer the curds to a mixing bowl and sprinkle with 1 tsp of salt. Mix gently to combine.
