Method

Preparation

  1. 1

    Sauté the Vegetables

In a large pot or Dutch oven, melt the butter over medium heat. Add the diced onion and celery, and sauté for about 5 minutes until they are softened and translucent. Stir in the minced garlic and sauté for an additional minute until fragrant.

  2. 2

    Cook the Potatoes

Add the diced potatoes to the pot. Pour in the chicken broth and bring to a boil. Reduce the heat to low, cover the pot, and let it simmer for about 15 minutes, or until the potatoes are tender.

Cooking

  1. 3

    Add Clams and Cream

Once the potatoes are tender, add the canned clams (with their juice) to the pot. Stir in the heavy cream, thyme, bay leaves, salt, and black pepper. Mix well and let the chowder simmer on low heat for an additional 10 minutes.

  2. 4

    Final Seasoning

Taste the chowder and adjust the seasoning with more salt and pepper as needed. Remove the bay leaves before serving.

Serving

  1. 5

    Garnish and Serve

Ladle the chowder into bowls. Top each bowl with crumbled bacon and a sprinkle of fresh parsley. Serve hot and enjoy!
