Prepare the Filling
In a mixing bowl, combine the shredded chicken, cheddar cheese, cumin powder, chili powder, salt, and black pepper. Mix well until all ingredients are evenly combined.

Assemble the Taquitos
Take a tortilla and place about 2 tablespoons of the chicken mixture in the center. Roll the tortilla tightly around the filling. Repeat with all tortillas.

Fry the Taquitos
In a large skillet, heat the olive oil over medium heat. Once hot, add the taquitos seam-side down. Fry until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Add Milk
Gradually pour in the milk, whisking constantly to avoid lumps. Continue to cook until the mixture thickens, about 3-5 minutes.

Add Cheese and Seasoning
Reduce the heat to low, then add the shredded cheddar cheese, garlic powder, salt, and black pepper. Stir until the cheese is melted and the sauce is smooth.
