Prepare the Filling

    Make the Ricotta Mixture

    In a mixing bowl, combine the ricotta cheese, grated Parmesan cheese, chopped basil, salt, black pepper, and lemon zest. Mix well until all ingredients are fully incorporated and the filling is creamy.

Prepare the Zucchini Blossoms

    Prep the Blossoms

    Carefully wash the zucchini blossoms under cold water and gently pat them dry with a paper towel. Make sure to remove any small insects from inside the flowers.

    Stuff the Blossoms

    Using a small spoon or piping bag, gently stuff each zucchini blossom with the ricotta filling. Be careful not to overstuff, as the blossoms can tear.

Batter and Fry

    Prepare the Batter

    In a shallow bowl, whisk together the eggs until well beaten. In another bowl, add the flour with a pinch of salt and in a third bowl, place the breadcrumbs.

    Coat the Blossoms

    Dip each stuffed zucchini blossom first into the flour, then the beaten eggs, and finally coat with breadcrumbs, ensuring an even layer on each blossom.

    Fry the Blossoms

    In a large skillet, heat the olive oil over medium heat. Once hot, add the coated zucchini blossoms and fry until golden brown on all sides, about 3-4 minutes. Remove and place on a paper towel to drain excess oil.
