Grilled Vegetables

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Prepare the Vegetables

    Wash and slice the zucchini, bell pepper, eggplant, and red onion into even pieces.

    Season the Vegetables

    In a large bowl, toss the sliced vegetables with olive oil, salt, black pepper, and dried oregano until evenly coated.

    Grill the Vegetables

    Place the seasoned vegetables on the grill. Cook for about 5-7 minutes on each side, or until they are tender and have grill marks.

Serve with Mozzarella

    While the vegetables are grilling, slice the fresh mozzarella cheese into 1/4-inch thick rounds.

Make Sundried Tomato Aioli

    Blend Ingredients

    In a food processor, combine sundried tomatoes, mayonnaise, garlic cloves, lemon juice, salt, and black pepper.

    Blend the mixture until smooth and creamy. Adjust seasoning with more salt and pepper if needed.

Final Assembly
