Method
Cooking the Pasta

Boil Water
Fill a large pot with water and add 1 tablespoon of salt. Bring it to a rolling boil over high heat.

Cook Tonnarelli
Once the water is boiling, add the tonnarelli pasta and cook according to package instructions until al dente, usually about 7-8 minutes.
Preparing the Sauce

Grate the Cheese
While the pasta is cooking, finely grate the Pecorino Romano cheese and set it aside.

Toast Black Pepper
In a large skillet, over medium heat, toast the freshly cracked black pepper for about 1 minute until fragrant. Be careful not to burn it.
Combining Ingredients

Combine Pasta and Pepper
When the pasta is cooked, reserve about 1 cup of the pasta cooking water, then drain the pasta. Add the hot pasta directly into the skillet with the toasted black pepper.

Add Cheese
Remove the skillet from the heat. Immediately add the grated Pecorino Romano cheese to the pasta and toss quickly. Add reserved pasta water a little at a time until a creamy sauce forms.

Finish with Olive Oil
Drizzle the extra virgin olive oil over the pasta and toss again to combine all the ingredients well. Adjust seasoning with additional black pepper if desired.
