Cooking the Pasta

In a large pot, bring salted water to a boil over high heat.

Add the rigatoni pasta to the boiling water and cook according to package instructions, usually about 10-12 minutes until al dente.

Once cooked, drain the pasta in a colander and set aside, reserving a cup of pasta water.
Making the Bolognese Sauce
