    Cook the Rigatoni

    In a large pot, bring water to a boil. Add salt and the rigatoni pasta. Cook according to package instructions until al dente, typically about 10-12 minutes. Drain and set aside.

Meat Sauce Preparation

    Sauté Vegetables

    In a large skillet, heat olive oil over medium heat. Add the diced onion, carrot, and celery. Sauté for about 5 minutes or until the vegetables are softened. Add minced garlic and cook for an additional minute.

    Brown the Meat

    Add the sweet fennel sausage (removed from casings) and ground beef to the skillet. Cook until browned, breaking up the meat with a spoon, about 8-10 minutes.

    Add Tomatoes and Seasonings

    Stir in the canned crushed tomatoes, tomato paste, oregano, basil, salt, and black pepper. If using, add the red wine. Bring the mixture to a simmer.

    Simmer the Sauce

    Reduce the heat to low and let the sauce simmer for about 30 minutes, stirring occasionally, until thickened.

Combine and Serve

    Combine Pasta and Sauce

    Once the sauce has thickened, add the cooked rigatoni to the skillet and toss to combine, ensuring the pasta is well-coated with the sauce.

    Serve the rigatoni hot, garnished with grated Parmesan cheese on top.
