Flatbread Preparation

Activate Yeast
In a small bowl, combine warm water (about 110°F or 43°C) with sugar and yeast. Let it sit for about 5-10 minutes until frothy.

Make Dough
In a large mixing bowl, combine flour and salt. Make a well in the center and add the activated yeast mixture and olive oil. Mix until a soft dough forms.

Knead the Dough
Turn the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.

Let Dough Rise
Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for about 1 hour, or until doubled in size.

Preheat Oven
Preheat your oven to 475°F (245°C). If using a pizza stone, place it in the oven to heat.

Shape Flatbread
Once the dough has risen, punch it down and divide it into two equal portions. Roll each portion out on a floured surface into a rectangle or oval shape, about 1/4 inch thick.

Add Fig Jam
Spread fig jam evenly over the top of each flatbread, leaving a small border around the edges.

Add Prosciutto
Layer the prosciutto slices over the fig jam.

Bake Flatbreads
Transfer the flatbreads to the preheated oven (or pizza stone) and bake for 10-12 minutes, or until the edges are golden brown.
