Preparation of Polenta

    Cook the Polenta

    In a saucepan, bring the vegetable broth to a boil. Slowly whisk in the polenta, stirring continuously to avoid lumps. Reduce heat to low and cook for about 20 minutes, stirring often, until thickened. Add salt and stir in butter for extra creaminess.

Cooking the Wild Mushrooms

    Sauté the Mushrooms

    In a skillet, heat a tablespoon of olive oil over medium heat. Add the wild mushrooms and sauté for about 5-7 minutes until they are tender and golden. Season with salt, pepper, and fresh thyme. Remove from heat and set aside.

Preparing the Crispy Shallots

    Fry the Shallots

    Thinly slice the shallots and coat them in flour. In a separate pan, heat vegetable oil over medium-high heat. Once hot, carefully add the floured shallots and fry until golden and crispy, about 2-3 minutes. Remove and drain on paper towels.

Cooking the Scallops

    Sear the Scallops

    In the same skillet used for the mushrooms, add a bit more oil if necessary and heat over high heat. Season the scallops with salt and pepper. Sear the scallops for about 2 minutes on each side until they develop a nice golden crust and are cooked through.

Plating

    Assemble the Dish

    On a plate, create a base with the polenta. Top with sautéed wild mushrooms and seared scallops. Finish with crispy shallots on top for crunch. Optionally, garnish with a sprig of thyme.
