Prepare the Crispy Cod

Make the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, salt, black pepper, and baking powder. Gradually whisk in the cold water until the batter is smooth and well combined.

Heat the Oil
In a large skillet or deep fryer, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Fry the Cod
Dip each cod fillet into the batter, allowing any excess to drip off. Carefully place the battered fillets into the hot oil and fry for about 3-4 minutes on each side or until golden brown and crispy. Remove from the oil and place on paper towels to drain excess oil.
Prepare the Spicy Aioli

Mix the Aioli
In a small bowl, mix together the mayonnaise, sriracha sauce, minced garlic, lemon juice, and salt. Adjust the spice level by adding more sriracha if desired. Set aside.
Assemble the Salad

Prepare the Salad
In a large bowl, toss the arugula and sliced tomatoes together. You may add a drizzle of olive oil and a pinch of salt to enhance the flavors, if desired.
Plate the Dish

Serve
On a plate, serve a generous portion of the salad topped with the crispy cod fillets. Drizzle with spicy aioli over the cod and salad for an extra kick.
