Method

Cooking the Pasta

    Boil Water

    In a large pot, bring water to a boil over high heat. Add a pinch of salt.

    Cook Pasta

    Add 8 cups of pasta to the boiling water and cook according to package instructions until al dente, usually about 8-10 minutes.

    Drain Pasta

    Once cooked, drain the pasta in a colander and set aside. Do not rinse.

Preparing the Vegetables

    Chop Vegetables

    Chop the bell peppers, zucchini, and carrot into bite-sized pieces. Halve the cherry tomatoes.

    Sauté Vegetables

    In a large skillet, heat 4 tablespoons of olive oil over medium heat. Add the chopped bell peppers, zucchini, carrot, and sauté for about 5 minutes.

    Add Spinach

    Add the fresh spinach to the skillet and cook until wilted, about 2-3 minutes.

Making the Sauce

    Add Garlic

    Add the minced garlic to the skillet and sauté for another 1-2 minutes, being careful not to burn it.

    Season the Mixture

    Season with salt and black pepper to taste, and stir to combine.

Combining Everything

    Combine Pasta and Sauce

    Add the drained pasta to the skillet and toss everything together over medium heat for about 2-3 minutes.

    Finishing Touches

    Sprinkle the grated Parmesan cheese and chopped fresh basil over the pasta and toss gently to combine.

    Serve

    Serve warm, garnished with additional Parmesan cheese and basil if desired.
