Pasta

Method

Pasta Preparation

  1. 1

    Mixing the Dough

In a large mixing bowl, combine the semolina flour and salt. Gradually add water, mixing with your hands until a dough forms.

  2. 2

    Kneading

Transfer the dough to a floured surface and knead for about 8-10 minutes until smooth and elastic.

  3. 3

    Resting the Dough

Cover the dough with a damp cloth and let it rest for 30 minutes.

  4. 4

    Shaping Orecchiette

After resting, divide the dough into small pieces. Roll each piece into a small log and cut into small pieces. Use your thumb to press each piece, creating a small 'ear' shape.

  5. 5

    Drying

Place the shaped orecchiette on a floured surface to dry for about 15 minutes.

Sauce Preparation

  1. 6

    Sautéing Garlic

In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.

  2. 7

    Cooking Tomatoes

Add halved cherry tomatoes to the skillet. Cook for about 5-7 minutes until they are soft and start to burst.

  3. 8

    Seasoning the Sauce

Add salt and black pepper to the tomatoes. Stir well, then add chopped fresh basil and cook for an additional 2 minutes.

  4. 9

    Combining Pasta and Sauce

In a large pot of boiling salted water, cook the orecchiette for 3-5 minutes until they float to the top. Drain and add to the skillet with the sauce.

  5. 10

    Finishing Touch

Toss the orecchiette in the sauce gently. Serve with a generous sprinkle of grated Parmesan cheese on top.
