    Prepare the Ingredients

    Rinse and drain the white beans if using canned. Chop the escarole into bite-sized pieces. If using fresh tomatoes, chop them into small cubes.

Cooking

    Sauté Garlic

    In a large skillet or pot, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1-2 minutes until fragrant, being careful not to burn it.

    Add Escarole

    Add the chopped escarole to the skillet, stirring well. Cook for about 3-5 minutes until the escarole is wilted.

    Add Tomatoes

    Stir in the chopped tomatoes and red pepper flakes. Cook for another 5 minutes, allowing the tomatoes to soften and release their juices.

    Incorporate White Beans

    Add the white beans to the skillet, stirring to combine. Season with salt and black pepper to taste. Cook for an additional 5 minutes, allowing the flavors to meld.

    Cook the Merluzzo

    Make space in the center of the skillet and place the merluzzo fillets skin-side down. Cook for about 4-5 minutes on each side, or until the fish is cooked through and flakes easily with a fork.

    Once the fish is cooked, drizzle the fresh lemon juice over the dish. Give everything a gentle stir to combine.
