    Prepare the Peas

    Rinse the yellow split peas under cold water until the water runs clear. This helps remove any impurities.

    Chop the Vegetables

    Finely chop the onion, garlic, and ginger. Set aside for later use.

Cooking

    Cook the Peas

    In a medium-sized pot, combine the rinsed yellow split peas and 4 cups of water. Bring to a boil over medium-high heat.

    Simmer

    Once boiling, reduce heat to low, cover, and let simmer for about 30-40 minutes or until the peas are soft and cooked through.

    Sauté the Aromatics

    In a separate pan, heat 2 tablespoons of vegetable oil over medium heat. Add the chopped onion, garlic, and ginger, and sauté until the onion is translucent (about 5-7 minutes).

    Add Spices

    Stir in the turmeric powder, cumin seeds, and black pepper to the sautéed mixture. Cook for an additional 2 minutes to allow the spices to bloom.

    Once the split peas are cooked, add the sautéed mixture to the pot. Stir well to combine. Add salt to taste and let it simmer for another 5-10 minutes to meld the flavors.

    Stir in the lemon juice to brighten the flavors of the stew.
