Pasta Preparation

    Cook the Garganelli

    In a large pot, bring salted water to a boil. Add the garganelli pasta and cook according to package instructions until al dente (usually about 8-10 minutes).

    Drain and Set Aside

    Once cooked, drain the pasta and reserve about 1 cup of the pasta water. Set the pasta aside, keeping it warm.

Sauce Preparation

    Sauté the Speck

    In a large skillet, heat the olive oil over medium heat. Add the speck and sauté for about 2-3 minutes until it starts to crisp.

    Add Vegetables

    Add the chopped radicchio and frozen peas to the skillet. Cook for another 3-4 minutes until the radicchio has wilted and the peas are heated through.

    Make the Cream Sauce

    Pour in the heavy cream and stir to combine. Let it simmer for about 2 minutes until the cream thickens slightly.

    Incorporate Parmesan

    Add the grated Parmesan cheese to the sauce and stir until fully melted. If the sauce is too thick, add some reserved pasta water to reach desired consistency. Season with black pepper to taste.

Combine and Serve

    Combine Pasta and Sauce

    Add the cooked garganelli to the skillet with the sauce. Toss everything together until the pasta is well coated with the sauce.

    Serve

    Plate the garganelli and garnish with additional grated Parmesan and black pepper if desired. Serve immediately.
