For Grapefruit Foam
Method
Juicing Fruits
Prepare the Fruits
Cut the grapefruit, blood orange, and lemon in half. Juice each half separately using a citrus juicer, ensuring to collect all the juice in a bowl. You should aim for about 1 cup of grapefruit juice, 1/2 cup of blood orange juice, and 1/4 cup of lemon juice.
Combine Juices
In a mixing bowl, combine the freshly squeezed grapefruit juice, blood orange juice, and lemon juice with 2 tablespoons of honey. Stir well until the honey is fully dissolved.
Making Grapefruit Foam
Prepare the Foam
In a mixing bowl, combine 1 cup of grapefruit juice, 1 egg white, and 1 tablespoon of sugar. Use a hand mixer or stand mixer to whip the mixture until it forms soft peaks and becomes frothy.
Chill the Foam
Once the foam is ready, transfer it to the refrigerator to chill for about 15 minutes before serving.
Serving
Assemble the Drink
Pour the juice mixture into a serving glass, filling it about three-quarters full. Gently spoon the grapefruit foam on top of the juice mixture, creating a layered effect.
Garnish and Enjoy
Optionally, garnish with a slice of grapefruit or blood orange on the rim of the glass. Serve immediately and enjoy your Dry Sunrise!
