Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 425°F (220°C) and grease four ramekins with butter, then dust with cocoa powder.

  2. 2

    Melt Chocolate and Butter

In a heatproof bowl, combine the semi-sweet chocolate and unsalted butter. Melt them together in a microwave in 30-second intervals, stirring in between, until smooth and fully melted.

  3. 3

    Mix Eggs and Sugar

In another bowl, whisk together the large eggs, large egg yolks, and granulated sugar until pale and slightly thickened.

  4. 4

    Combine Mixtures

Pour the melted chocolate and butter mixture into the egg mixture. Stir gently until just combined.

  5. 5

    Add Dry Ingredients

Sift the all-purpose flour and salt into the chocolate mixture. Add the vanilla extract, then fold the dry ingredients into the wet ingredients until no flour streaks remain.

  6. 6

    Fill Ramekins

Divide the batter evenly among the prepared ramekins, filling each about 3/4 full.

  7. 7

    Bake

Bake in the preheated oven for 12-14 minutes, or until the edges are firm but the center is still soft.

  8. 8

    Cool and Serve

Remove from the oven and let the cakes cool for 1 minute. Carefully invert each ramekin onto a plate and gently lift off the ramekin. Dust with powdered sugar and serve immediately with a scoop of vanilla ice cream.
