Method

Pasta Preparation

  1. 1

    Cook the Spaghetti

Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.

  2. 2

    Drain the Pasta

Once cooked, reserve about 1 cup of the pasta water, then drain the spaghetti in a colander.

Sauce Preparation

  1. 3

    Sauté Garlic

In a large pan, heat the extra virgin olive oil over medium heat. Add the minced garlic cloves and sauté for about 1-2 minutes until fragrant but not browned.

  2. 4

    Add Truffle Oil

Lower the heat and add the truffle oil to the pan, stirring to combine with the garlic and olive oil.

  3. 5

    Incorporate the Spaghetti

Add the drained spaghetti to the pan. Toss well to coat the pasta with the oil mixture.

  4. 6

    Add Black Truffle

Finely shave or grate the black truffle over the pasta, stirring gently to incorporate.

  5. 7

    Finish with Parmesan

Sprinkle the grated Parmesan cheese over the pasta and toss again. If the pasta seems dry, add reserved pasta water a little at a time until desired creaminess is achieved.

  6. 8

    Season

Season with freshly cracked black pepper to taste. Toss everything together before serving.
