Marinate the Lamb Chops
In a bowl, combine the minced garlic, olive oil, chopped rosemary, thyme, salt, and black pepper. Add the lamb chops and coat well. Cover and marinate for at least 30 minutes, or overnight in the refrigerator for best flavor.

Cook the Lamb Chops
Preheat the oven to 400°F (200°C). Heat a large skillet over medium-high heat. Sear the marinated lamb chops for 2-3 minutes on each side until browned. Transfer the skillet to the oven and roast for 10-15 minutes for medium-rare, or until desired doneness. Let rest for 5 minutes before serving.

Mix the Salsa Verde
In a large bowl, combine the cooked potatoes, chopped artichoke hearts, diced fennel, and chopped parsley. Add the lemon juice and olive oil, then season with salt and black pepper to taste. Toss gently to combine all ingredients.
