Universal base

Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

Split the mini rolls horizontally, leaving the bottoms intact if using slider-style to make assembly easier; otherwise split fully and keep tops nearby.

In a small saucepan or microwave-safe bowl, melt the unsalted butter until just melted. Stir in 2 tbs mayonnaise, Dijon mustard, salt and black pepper to make a spread; reserve remaining mayonnaise for assembling (or use all mayonnaise on sandwiches if preferred).

Brush the cut side of all bottom halves lightly with the butter-mustard mixture. Place bottoms on the prepared baking sheet, brush the cut side of the top halves lightly as well if you want a golden top.

If you prefer warm sandwiches, toast the bottoms and tops in the oven for 6–8 minutes, until slightly golden. Remove and cool briefly before assembling. If serving cold, skip to assembly after brushing.

Assemble turkey bites
Spread about 1 tbsp of reserved mayonnaise on each bottom roll (use more or less to taste).

Fold or layer approximately 0.5 oz (about 3/4 tablespoon) turkey per sandwich so it fits within the roll without overhang; total about 12 oz across 24 sandwiches. Tuck a small piece of butter lettuce on top of the turkey.

Top with a thin slice of cheddar (about 1/3 oz per sandwich) and a small dollop (about 1/2 tsp) of cranberry relish. Cap with the top roll and press lightly.

If desired, secure each sandwich with a toothpick and arrange on a platter. Sprinkle sesame seeds or everything seasoning lightly on top for presentation.

Assemble ham bites
Spread a thin smear (about 1/2 tsp) of the Dijon-butter mixture or leftover mayonnaise on each bottom roll. Spread 1/8 tsp brown mustard on the top if you want a little tang on the interior.

Layer approximately 0.5 oz ham per sandwich (12 oz total across 24 sandwiches), followed by a thin slice of Swiss cheese and one dill pickle slice (or half a slice if using large pickles).

Cap with the top roll and press gently. Secure with a toothpick if serving standing, and wipe any excess mustard from the edges.
Vegetarian two-bite sandwiches (serves 8)

Assemble vegetarian bites
Spread about 1 tsp mayonnaise or the butter-mustard mixture on each bottom roll (more if using plain rolls).

Place a small strip of roasted red pepper (about 1 tablespoon worth) on the bottom, then a slice or half bocconcini (approx. 1/3 oz mozzarella per sandwich). Add one basil leaf on top of the cheese.

Drizzle a very small amount (a few drops, roughly 1/10 tsp) of balsamic glaze over the basil, cap with the top roll and press lightly. Secure with a toothpick if desired.
Optional garnish & finishing

Arrange all assembled sandwiches on a serving platter. Sprinkle chopped parsley over the platter for color.
