    Pour about 1 cup of vegetable oil into a heavy skillet or shallow saucepan so the oil is about 1/4 inch deep. Heat over medium-high until it reaches 350°F (175°C) or until a small corner of a tortilla bubble rises immediately when placed in the oil.

    Working in small batches (4–6 wedges at a time), carefully add tortilla wedges in a single layer, frying and flipping as needed so they crisp evenly. Fry about 1 to 1 1/2 minutes per side until golden and crisp. Use a spider or slotted spoon to transfer chips to a paper-towel-lined tray to drain.

    While still warm, sprinkle chips with fine sea salt to taste. If using, combine 1 tsp ground cumin and 1 tsp smoked paprika and sprinkle lightly across batches for a spiced variation. Let chips cool and crisp for 5 minutes before serving.
