Preparation
Preheat your oven to 450°F (232°C).
Season the Roast
In a small bowl, mix together kosher salt, black pepper, garlic powder, and chopped fresh rosemary. Rub the olive oil over the prime rib roast and then generously apply the seasoning mixture all over the roast.
Roasting
Place the seasoned prime rib roast on a roasting pan with the bone side down. Insert a meat thermometer into the thickest part of the roast. Roast in the preheated oven for 20 minutes.
Reduce Temperature
After 20 minutes, reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches your desired doneness (about 1.5 to 2 hours for medium-rare, or 130°F/54°C).
Resting
Once done, remove the roast from the oven and cover it loosely with aluminum foil. Allow it to rest for at least 20 minutes before carving. This helps the juices redistribute.
Serving
Carve the roast into slices and serve with the beef broth drizzled over the top or served on the side.
