Crostini Preparation

    Grilling the Brioche

    Preheat your grill or grill pan over medium heat. Slice the brioche loaf into 1/2-inch thick slices. Brush each slice with olive oil on both sides. Grill the brioche slices for about 2-3 minutes per side until golden and crispy. Remove from grill and set aside.

    Making Crispy Garlic

    Finely slice the garlic cloves. In a small pan, heat a tablespoon of olive oil over medium heat. Add the sliced garlic and cook until golden brown and crispy, about 2-3 minutes. Remove and drain on paper towels.

    Preparing the Topping

    In a mixing bowl, combine the cherry tomatoes (halved), ricotta cheese, fresh basil leaves, salt, and black pepper. Mix gently until the tomatoes are evenly coated with ricotta and seasonings.

Sherry Agrodolce Preparation

    Making Agrodolce

    In a small saucepan, combine sherry vinegar, honey, and red pepper flakes. Bring the mixture to a simmer over medium heat and cook for about 5-6 minutes until slightly thickened. Remove from heat and let cool.

Assembly

    Assembling the Crostini

    To assemble, place a generous spoonful of the tomato and ricotta topping on each grilled brioche slice. Drizzle with the sherry agrodolce and sprinkle the crispy garlic on top. Serve immediately.
