Roast the Cauliflower
Preheat the oven to 425°F (220°C). Toss the cauliflower florets with 2 tablespoons of olive oil, salt, and black pepper. Spread them on a baking sheet and roast for 20-25 minutes until golden brown and tender.
Prepare the Green Beans
While the cauliflower is roasting, bring a pot of salted water to a boil. Add the green beans and blanch for 3-4 minutes until bright green and tender-crisp. Drain and set aside.
Cook the Arctic Char
In a large skillet, heat the remaining 2 tablespoons of olive oil over medium heat. Add the minced garlic and sauté for 1 minute until fragrant. Place the Arctic char fillets skin-side down in the skillet. Cook for 4-5 minutes until the skin is crispy. Flip the fillets and cook for another 3-4 minutes until the fish is opaque and flakes easily with a fork.
Combine and Serve
In a large bowl, combine the roasted cauliflower, blanched green beans, Castelvetrano olives, and sliced almonds. Drizzle with lemon juice, and season with salt and black pepper to taste. Serve the Arctic char fillets on plates, topped with the vegetable mixture.
