Method

Cooking Farro and Shrimp

    Cook the Farro

    In a medium pot, combine farro with 3 cups of water and a pinch of salt. Bring to a boil, then reduce heat and simmer for about 20-25 minutes or until tender. Drain any excess water and set aside.

    Cook the Shrimp

    In a skillet over medium heat, add a splash of olive oil. Season shrimp with salt and pepper, then cook for about 2-3 minutes on each side until they are pink and opaque. Remove from heat and set aside.

Preparing Brussels Sprouts and Red Pepper

    Crisp Brussels Sprouts

    Trim and halve the Brussels sprouts. In the same skillet, add more olive oil if needed and sauté the Brussels sprouts until they are crispy and golden brown, about 5-7 minutes.

    Char the Red Pepper

    Char the whole red bell pepper directly over an open flame or under a broiler until the skin is blackened. Place in a bowl to steam for 10 minutes, then peel off the skin, remove the seeds, and slice.

Making Crema Verde

    Blend the Crema

    In a blender, combine Greek yogurt, fresh cilantro, lime juice, garlic, and salt. Blend until smooth and creamy. Adjust seasoning to taste.

Assembling the Salad

    Combine Ingredients

    In a large bowl, combine cooked farro, shrimp, crispy Brussels sprouts, sliced apple, and charred red pepper. Drizzle with crema verde and toss gently to combine.

    Divide the salad among plates and serve immediately, garnished with additional cilantro if desired.
