1. Prepare the Tomatoes
Wash the Cookstown heirloom tomatoes thoroughly. Slice them into thick rounds and arrange them on a serving platter.
2. Add Stracciatella
Spoon the stracciatella cheese evenly over the sliced tomatoes.
3. Add Basil and Season
Tear the fresh basil leaves and scatter them on top of the tomatoes and cheese. Season with salt and black pepper to taste.
4. Drizzle with Herb Oil
In a small bowl, mix olive oil with any additional herbs you like (such as oregano or thyme). Drizzle this herb oil over the assembled dish.
