    Prepare ingredients

    Chill an old-fashioned / rocks glass by filling it with ice and setting aside. If using egg white, separate and measure 1/2 oz (about 1 small egg white portion). Juice a fresh lemon to get 1/2 oz.

    Dry shake (if using egg white)

    In a cocktail shaker, add 2 oz gin, 1/2 oz sweet vermouth, 1/2 oz Campari, 1/2 oz fresh lemon juice, 1/4 oz simple syrup, 2 dashes orange bitters and 1/2 oz egg white. Seal the shaker and shake vigorously without ice for 10–15 seconds to build a silky foam.

    Wet shake

    Add ice to the shaker (enough to fill). Shake again vigorously for 10–15 seconds until the shaker is very cold to the touch and the liquid is well chilled and slightly diluted.

    Glass prep & strain

    Dump the ice from the chilled rocks glass. Place a large ice cube in the glass. Double-strain the cocktail into the glass over the large ice cube using a Hawthorne strainer and a fine mesh strainer (to catch any egg white solids).

Garnish & Finish

    Express the oils of an orange twist: hold the twist over the drink, skin side down, and give it a sharp fold to release oils, then rub the rim with the twist and drop it into the glass.

    Optional: grate a light dusting of fresh nutmeg or a little extra orange zest over the foam for aroma. Serve immediately.
