Prepare ginger-rosemary syrup
Peel and thinly slice the fresh ginger. In a small saucepan combine 1 cup water and 1 cup granulated sugar. Add the sliced ginger and 2 rosemary sprigs. Bring to a gentle simmer over medium heat, stirring until the sugar dissolves. Lower heat and simmer for 8–10 minutes to infuse strong ginger-rosemary flavor. Remove from heat and let steep for 15 minutes more.

Strain the syrup through a fine-mesh sieve into a heatproof container, pressing on solids to extract liquid. Discard solids. Let the syrup cool to room temperature, then refrigerate until cold. This yields about 1 cup syrup.

Juice and mix lemon base
While the syrup cools, squeeze fresh lemons until you have 1 cup of juice (about 4–6 medium lemons). Strain the juice to remove seeds and most pulp if desired.

In a pitcher combine the 1 cup fresh lemon juice with 3 cups cold water. Stir to combine. Taste and adjust dilution if you prefer it stronger or milder (add up to 1/2 cup more water).

Add 3 cups of ice directly to the pitcher to chill the lemon base quickly if serving immediately.

Sweeten and finish
Add the cooled ginger-rosemary syrup to the lemon base. Start with 1/2 cup syrup, stir well, then taste. Add up to 1/2 cup more syrup if you want sweeter, spicy-scented limonata. Chill briefly if needed.

Just before serving, gently stir in 2 cups chilled sparkling water to give a light fizz. Pour into 6 tall glasses filled with ice (about 1/2 cup ice per glass remains).

Serve immediately. Leftover limonata (without sparkling water) and unused syrup keep refrigerated for up to 3 days; add sparkling water just before serving to preserve fizz.
