Crab and Marinade

Method

Crab and Marinade

  1. 1

    Prepare basil and jalapeño

Wash basil leaves, pat dry, stack and chiffonade or finely chop until you have about 3/4 cup packed. Stem, seed (if desired), and finely mince 1 jalapeño. Mince 3 garlic cloves.

  2. 2

    Make the marinade

In a medium bowl combine 3 tablespoons fresh lime juice, 3 tablespoons extra-virgin olive oil, 1 teaspoon sea salt, and 1/2 teaspoon freshly ground black pepper. Whisk until emulsified, then stir in the minced garlic, chopped basil, and minced jalapeño.

  3. 3

    Fold in crab

Add 1 pound of picked blue crab meat to the bowl. Gently fold the crab into the marinade using a rubber spatula, taking care not to break up the lumps. Make sure all crab is lightly coated. Taste and adjust seasoning — add more salt or lime juice as needed.

  4. 4

    Chill briefly

Cover the bowl and refrigerate for 20–30 minutes to let flavors meld. Do not marinate longer than 1 hour to preserve delicate crab texture.

Finish & Garnish

  1. 5

Plate the chilled crab mixture in a shallow bowl or on a small platter. Garnish with 1/4 cup micro basil or torn small basil leaves scattered over the top.

  2. 6

Drizzle 1 teaspoon chile oil or a little additional olive oil over the crab for gloss and a touch of heat, if desired. Add fresh lime wedges on the side.

  3. 7

Serve with 12 toasted baguette slices or crackers. For toasted baguette: slice 1 small baguette, brush lightly with olive oil, and bake at 375°F (190°C) for 6–8 minutes until golden.

  4. 8

Enjoy immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 24 hours.
