    Prepare the Filling

    In a mixing bowl, combine the minced dry-aged beef, chopped foie gras, miso paste, mustard, and finely chopped scallions. Mix well until all ingredients are fully incorporated.

    Fill the Wontons

    Lay out the wonton wrappers on a clean surface. Place a small spoonful (about 1 teaspoon) of the filling in the center of each wrapper. Moisten the edges of the wrapper with a little water, fold it in half to create a triangle, and press the edges to seal. Ensure there are no air pockets.

    Cook the Wontons

    Bring a pot of water to a gentle boil. Carefully drop the wontons into the water in batches, making sure not to overcrowd the pot. Cook for about 4-5 minutes or until they float to the surface and are cooked through. Remove with a slotted spoon.

    Serve

    Serve the wontons hot, optionally with a dipping sauce made from soy sauce and a splash of rice vinegar.
