Prepare the Patties
In a large bowl, gently mix the dry aged ground beef with salt and black pepper. Form the mixture into 4 equal patties, about 3/4 inch thick. Make a slight indentation in the center of each patty to prevent puffing during cooking.
Prepare the Buns
While the patties are cooking, toast the burger buns on the grill or in a toaster until golden brown.
Assemble the Burger
Spread mayonnaise, ketchup, and mustard on the bottom half of each toasted bun. Add a lettuce leaf, the cooked patty with melted cheese, a slice of tomato, and onion rings. Top with the other half of the bun.
Serve
Serve the burgers hot with a side of fresh cut fries.
