    Prepare the Bulgur

    In a large bowl, combine the fine bulgur wheat and water. Let it soak for about 30 minutes until the bulgur is soft.

    Sauté the Vegetables

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and garlic, and sauté until translucent, about 3-4 minutes. Stir in the grated zucchini and carrot, and cook for another 5 minutes. Remove from heat and let cool.

    Mix the Kibbeh Mixture

    In the bowl with the soaked bulgur, add the semolina, sautéed vegetables, parsley, mint, cumin, salt, pepper, and lemon juice. Mix well until combined.

    Shape the Kibbeh

    Wet your hands and take a handful of the mixture. Shape it into oval or round patties, about 1/2 inch thick.

    Grill the Kibbeh

    Preheat the grill to medium heat. Brush the patties with the remaining olive oil and grill for about 5-7 minutes on each side, or until they are golden brown and cooked through.

    Serve

    Serve the grilled kibbeh warm, accompanied by fresh farm greens and a drizzle of lemon juice.
