Sauté the Asparagus and Peas
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the asparagus and sauté for 3-4 minutes until tender. Add the peas and cook for an additional 2 minutes. Season with salt and pepper. Remove from heat and toss with chopped mint and dill.

Sear the Salmon
Season the salmon fillets with salt and black pepper. In the same skillet, add the remaining tablespoon of olive oil and heat over medium-high heat. Add the salmon fillets skin-side down and sear for about 4-5 minutes. Flip and cook for another 3-4 minutes until cooked through and golden brown.

Plate the Dish
On a plate, arrange the boiled early potatoes, sautéed asparagus and peas, and the seared salmon. Drizzle with escabeche sauce and garnish with additional mint and dill if desired.
